Friday’s recipe – another easy peasy one

 

It’s Friday so that means I have another recipe for you. This is the best kind of recipe because it involves absolutely no cooking.

That’s right, I’m talking about zilch time at the stove and zilch chance of failure.

Easy shrimp/prawn mini sandwiches.  These have the yum factor, so that makes them perfect to take out and show off.

1/2 cup of mayonnaise. Use the best there is, like whole egg.

Half a kilo of cooked shrimps or prawns. That’s just over a pound ( for those of you living in America.)

A dozen slices of bread – white works best because it’s light and fluffy and this not a rustic kind of snack. Think high tea.

Some baby rocket leaves, a decent handful should do it.

Toothpicks. Necessary to hold these puppies together.

Lemon juice, (juice of half a lemon)

Lemon rind (only a teaspoon or two, depending on how lemony you like things.

salt and pepper.

Okay, there’s almost nothing to it. Mix your mayonnaise with your lemon juice and rind, salt and pepper, then dip your finger in and taste.

This is the worst bit. Take the shell off the prawn and de-vein. Or, you could buy them already de-shelled but they mightn’t be as fresh.

Spread your mayonnaise mix over each slice of bread. Then cut off the crusts. Now, cut each slice in half, triangle like.

Put a few sprigs of rocket on each triangle, then top with a prawn.

Bring the two pointy ends of each  triangle together and stab them with your little toothpick, thus holding your little sandwich together.

Oh so yummy, and pretty good to look at too.
