Every Friday from now on, I’m going to post one of my favourite hassle-free food ideas.

To qualify, the recipe needs to be easy, foolproof and darn good to eat. Today, I’m posting the breakfast I eat while I leisurely sip my coffee and read from my kindle in the sunshine (in another life, that is.)

Berries and Ricotta on  bread.

You choose which bread. Okay, if bread is too boring for you, you can use a healthy-style cake or waffles. I’ve used Bruschetta,  fruit bread, banana bread, pear bread and even French toast. Anything and everything works.

 

1) Toast a few slices of the bread or cake (obviously,if you’re using French toast, you’ll fry it instead).

2) Spread each slice with a thick layer of ricotta cheese (about half a cup per slice). You could also use mascarpone but it’s expensive. You could  use cottage cheese too (guilt free option) or cream cheese but I like ricotta.

3) Divide your fresh fruit mix (sliced banana, strawberries and blueberries, or anything in your fruit bowl) and arrange on top.

4) Drizzle with 1 tablespoon of honey.

 

It’s beyond simple, looks impressive and most importantly, is so yummy.
